For the life of me I cannot find any information about H.U. Westermayer. No clue. The quote is still good even if it turns out to be as polished and inaccurate as the rest of Thanksgiving folklore.

All your favorite staples of the holiday, save the turkey, were not on the menu, however they may have been munching on eagle as well. So... there is that.
